Coriander
Coriander (Cilantro) For its leaves (fresh or dried) as well as its seeds, coriander can be eaten, two parts of which are sufficiently distinct in terms of their levels of different active compounds. The health effects associated with cilantro intake have not been studied in humans to date. On the other hand, in livestock, certain properties assigned to coriander have been tested and this sheet will discuss these studies in particular.
The antioxidants. Compounds that reduce the harm caused by free radicals in the body are antioxidants.

Against Diabetes Cilantro?

 

Researchers have shown that adding extracts of coriander seed to the diet
of diabetic mice contributed to a drop in their blood sugar 8.
It is said that coriander seeds contain compounds that are capable of stimulating the secretion of insulin and increasing glucose entry into cells. According to the authors of the study, in people with diabetes,
cilantro may represent a new food adjuvant for blood sugar regulation.
However, controlled clinical studies are necessary to verify whether such an effect also occurs in humans.
Fresh cilantro leaves contain carotenoids, including beta-carotene, according to the Canadian Nutrient File.
For instance, almost as much beta-carotene as 250 ml of broccoli would contain 125 ml of fresh cilantro.
The same amount of fresh coriander, on the other hand, will produce ten times less than a carrot, a vegetable known for its excellent beta carotene content.
Bear in mind that beta-carotene is best absorbed by lipids in the body during the same meal and has the potential to turn into vitamin A in the body. In comparison, coriander seeds do not contain this valuable antioxidant compound.
In addition to contributing to the antioxidant function of coriander, its antibacterial activity observed in vitro can be partially explained by the existence of these substances.
It has been shown that some antioxidant compounds in coriander seeds often display an antioxidant impact on human cells, including under experimental conditions.
Although the precise intake of coriander seeds has not been tested in this research , the findings suggest a certain protective effect against oxidative stress in the body.
Lipid blood.

 

In addition to raising cholesterol levels, research in rats has shown that adding coriander
seeds to their diet can reduce total cholesterol, LDL-cholesterol (‘bad’ cholesterol) and triglyceride levels.

It should be noted that these properties were found in animals with an already degraded lipid profile
and that 10 percent of their daily diet was expressed by the amount of coriander seeds used.

Before concluding that coriander ingestion has proven effectiveness on blood lipids, these very early findings would have to be tested in humans.

Precautions

Oral allergy syndrome

In oral allergy syndrome, Coriander is implicated. This condition is the allergic reaction of a number of fruits , vegetables and nuts to certain proteins. It affects people who have allergies to pollen from the air. Hay fever is almost often accompanied by oral allergy syndrome. An immunological reaction can occur when some people are allergic to birch pollen and eat raw cilantro (cooking normally breaks down allergenic proteins).
Local symptoms, such as itching and burning sensations, confined to the mouth, lips and throat, may
then occur and usually disappear a few minutes after the offending food is eaten or touched.

This reaction is not severe in the absence of other symptoms and the intake of cilantro should not be stopped routinely. However, to assess the cause of reactions to plant foods, it is advised to consult an allergist.

The latter will be able to determine if there is a need to take special precautions.
Vitamin K and anticoagulotherapy
Coriander leaves (fresh or dried) contain vitamin K in substantial quantities.
In addition to being present in some foods, this vitamin, required among other things for blood clotting, can be produced by the body. A diet in which the vitamin K content is relatively constant from day to day should be consumed by people taking blood thinners, such as those sold under the names Coumadin ®, Warfilone ®, and Sintrom ®.
Herbs such as cilantro contain vitamin K and should therefore be used only as a spice and not as a side dish or meal (such as coriander leaf salad). In order to know the food sources of vitamin K and to ensure as stable a daily intake as possible, it is advisable for people on anticoagulation therapy to consult a dietician / nutritionist or a doctor.

Coriander Cilantro In Time

The word “coriander,” which originated in the twelfth century, comes from the Latin coriandrum, borrowed from the Greek koriandron. This word means “male bug (kori) (andros),” referring to the unpleasant odor of fresh
seeds, which is said to be reminiscent of that released by the male bug.
In the wild, coriander is unknown, so it’s hard to know exactly where it came from, but it’s assumed to come from the Mediterranean basin, Asia Minor or the Middle East. The seeds were already used 6000 years before our period by the Semitic peoples, then by the Egyptians, Greeks , and Romans, who had their bread flavored with them. In the Bible, where it is contrasted with manna, the plant is also mentioned.
It was popular in Europe throughout the Middle Ages and during the conquest would be brought to America by
the Spaniards. The coriander leaves are a classic Middle Eastern cuisine, parts of India, Southeast Asia and Latin America. On the other hand, their use in the West is relatively recent, with the exception of Portugal, where they
are used in a multitude of traditional dishes, since they were once blamed for giving off a foul smell.

Much of the world’s production goes to curry powder preparation, which consists of 25 to 40 percent. Moreover, it contains essential oils that are commonly used in baking and delicatessen, in
alcoholic beverages, in perfumery and in pharmaceuticals, where the bitterness of some medicines is disguised.
A subspecies is cultivated in Eastern Europe and Russia, the seeds of which are smaller and richer in essential oil.

Culinary Preparations

Seeds

To improve their flavor, before grinding them and adding them to dishes, dry them in a pan.
Digesting Legumes Better
When cooking them, it is recommended that ground coriander seeds be added to lentils or other legumes, as they are said to help digestion.

Conservation

Leaves: In the refrigerator in a plastic bag. When you place them in a glass of water and cover
them with a plastic bag, they will stay there much longer. Modify the water regularly.
In the freezer: Chop the leaves and put them with a little water in the ice cube trays.
It is not advisable to dry them, as this dissipates their fragrance.
Seeds: Cool, dry and covered in an airtight container from sun.

Coriander Cilantro Organic Gardening

Cilantro, be it leaves or seeds, is very easy to grow.
Cool temperatures are preferable for leaf development, as the plant easily goes to seed in
hot weather (which is a bonus when it comes to harvesting the seeds, of course).
In fact, sowing them during the season, from spring to fall, which will still
have fresh leaves available, and harvesting seeds later in the fall, is in your interest.
Soak the seeds overnight before sowing them about an inch deep to accelerate the germination, which is very sluggish. Thin out the plants to about 12 cm.

 

Avoid manure that is too rich, which would have the effect of reducing the plant ‘s flavor.

 

Approximately six weeks after sowing, leaves can be harvested. If we take the trouble of covering plants with an agrotextile when frost threatens, we will have it until the beginning of winter.
